We pick our grapes at lower sugar levels to ensure that our wine has lower alcohol content. The fruit is pressed into stainless steel tanks for primary fermentation, and then secondary fermentation using the Charmat method. The flavors are light and refreshing, including green apple, toasty, and a hint of blueberry. Blanc de Bleu is a brút and therefore balanced dry and crisp.
